Toddler – 10 Minute Cheese & Herb Scones


Ingredients

40g butter (leave a little for greasing)
125g self raising flour
100g wholegrain flour
1 tsp bicarbonate of soda
1 handful of fresh herbs (e.g. dill, oregano & rosemary), finely chopped
150ml milk
40g cheese, grated

Method

  1. Preheat the oven to 200ºC. Grease a baking tray with a little butter.
  2. Sieve the flour and bicarbonate of soda into a bowl.
  3. Using your fingers, rub the butter into the flour until it resembles breadcrumbs.
  4. Stir in the herbs, milk and half of the cheese.
  5. Knead the dough until smooth and lightly pat until it’s roughly 3cm thick.
  6. Using a cutter or simply your hands, cut out the scones and put onto the baking tray.
  7. With a pastry brush or your fingertips, coat the scones with a little milk and sprinkle over the remaining cheese.
  8. Cook for 8-10 minutes until risen and golden. Best served straight from the oven!
