Ingredients
40g butter (leave a little for greasing)
125g self raising flour
100g wholegrain flour
1 tsp bicarbonate of soda
1 handful of fresh herbs (e.g. dill, oregano & rosemary), finely chopped
150ml milk
40g cheese, grated
Method
- Preheat the oven to 200ºC. Grease a baking tray with a little butter.
- Sieve the flour and bicarbonate of soda into a bowl.
- Using your fingers, rub the butter into the flour until it resembles breadcrumbs.
- Stir in the herbs, milk and half of the cheese.
- Knead the dough until smooth and lightly pat until it’s roughly 3cm thick.
- Using a cutter or simply your hands, cut out the scones and put onto the baking tray.
- With a pastry brush or your fingertips, coat the scones with a little milk and sprinkle over the remaining cheese.
- Cook for 8-10 minutes until risen and golden. Best served straight from the oven!
