Spicy Turkey Burgers with Summer Salad


Ingredients

For the Burgers
400 g turkey mince
half red onion, grated finely
1 garlic clove, crushed
1 tsp madras curry powder
1 tbsp chopped fresh coriander
1 egg yolk
1 tbsp olive oil
4 wholemeal burger buns

For the Salad
300 g Baby Spinach
half red onion
7 dried apricots, chopped into small pieces
12 cherry tomatoes
30 g pine nuts
1 small eating apple, chopped into small piece
Squeeze of lemon juice

Method

In a salad bowl, mix the salad ingredients together, drizzle very lightly with olive oil and a squeeze of lemon juice. Leave aside.

In a large bowl, mix together the turkey mince, onion, garlic, curry powder, coriander and egg yolk with a little salt and pepper.

Mix well with your hands.

Then shape into four flat burgers.

Heat the oil in a frying pan over a high heat, then cook the burgers for 5 minutes each or until cooked through, turning half way.

Slice the burger buns in half and lightly toast under a grill.

Place some of the salad on the bottom halves of the warm buns, then top with the burgers and chutney.

Serve with the remaining salad.
