Scrambled Eggs with Smoked Salmon


Ingredients

110 g spinach, washed
2 eggs, beaten
25 g low fat spread
60 g smoked salmon
2 slices slices multi seeded bread
Chives to garnish

Method

Place the spinach in a pan and cook for 1-2 minutes until just wilted, cover and keep warm.

Melt the low fat spread in a small non-stick pan and when sizzling add the egg. Stir continuously until softly set.

Lightly toast the bread until golden.

Spoon the spinach onto the toast, top with the scrambled egg and smoked salmon and garnish with chives.
