Apple & Blackberry Filo Parcels
3 sheets readymade frozen filo pastry (defrosted)
1 large cooking apple, peeled and chopped (bite-sized cubes)
3-4 tbsp blackberries (washed)
1 tbsp sugar
1 tsp cinnamon
1 egg, beaten

Preheat the oven to 180oC and grease a large flat baking tray.
Put the chopped Bramley apples, blackberries, cinnamon and sugar in a bowl and mix lightly to combine.
Unfold the filo pastry on top of a large chopping board (keeping the 3 sheets on top of each other). Cut the sheet in quarters, so you will have 12 smaller squares of filo.
Arrange 1 square of filo pastry on the baking tray and top with another square at a right angle to the first square. Spoon some of the apple & blackberry mix in the centre (don’t overfill). Fold the filo layers over the fruit leaving some of the fruit visible. Top with a blackberry.
Repeat with the rest of the pastry and fruit until you have 6 parcels. Brush the beaten egg around the top of the pastry with a pastry brush.
Place the baking tray in the oven and bake for 15-20 minutes, until the pastry is golden. Keep a close eye on it as it can burn quickly after about 15 minutes.
Dust with icing sugar and serve with some berries on the side and a dollop of natural yogurt if you like!
