Tomato Bruschetta


Ingredients

1 small baguette
1 large tomatoes
1 clove of garlic
2 tsp olive oil
Fresh basil
Freshly ground black pepper

Method

  • 1 small baguette

Preheat the oven to 180oC. Cut the baguette into rounds, about 2cm thick. Cut the garlic clove in half and rub the cut side over each slice of bread.

 

Place the bread on a baking tray and bake in the oven for 5-10 minutes until crisp, turning over halfway through. Keep a close eye on these so they don’t burn! You can do this in advance as the bread doesn’t need to be hot for serving.

 

Meanwhile, cut the tomatoes in half and remove the seeds. Chop the tomato flesh into small pieces. Place in a bowl and add the olive oil, torn basil and black pepper. Mix to distribute evenly.

 

When the bread is ready, place spoonfuls of the tomato on top of each slice. Serve straight away.
